Cabinet and Loading Structure

  • Dual-cabinet structure, the two cabinets open independently; a single cabinet can be opened on its own, one cabinet cooling while the other is loaded.
  • Overall dimensions 1900 × 940 × 2150 mm, single-cabinet inner cavity 580 × 720 × 1430 mm, single-cabinet volume 0.597 m³, total of two cabinets 1.194 m³.
  • The cabinet interior is 304 stainless steel plate, and the insulation layer is PU polyurethane integral foaming.
  • Rack 460 × 600 × 1370 mm, 30 standard trays per cabinet; matching trolley 2000 × 1040 × 2250 mm, materials go in and out of the cabinet on the trolley.
  • The evaporator defrosts on a set cycle (electric heating or hot-gas defrost); check the door gasket regularly, as a poor door seal will affect cooling.

Refrigeration System and Cooling

  • The refrigeration system consists of a compressor, finned-tube evaporator, air-cooled condenser and piping; unlike vacuum blast chillers, this machine does not include a vacuum system.
  • Evaporating temperature -40℃, cabinet interior can reach -45℃, a relatively large temperature difference; the evaporator fan drives cold-air circulation inside the cabinet, and air-duct guide plates distribute the air supply, with cold air blowing directly across the food surface to carry away heat.
  • The condensing method is air-cooled with a built-in fan, requiring no cooling water connection; it can be changed to a water-cooled configuration, confirmed per order.

Control System and Operation

  • Thermostat or PLC with touch screen, running automatically according to the set discharge target temperature; the discharge temperature is adjustable within the range of 3~10℃.
  • Core temperature is measured by inserting a probe thermometer into the center of the material; an infrared thermometer gun reads surface temperature and cannot replace it.
  • Select 220V or 380V according to site conditions, power cable 2.5 square, grounding and circuit breaker according to installation requirements.

Application Scenarios

Scenario Description
Cooked food processing Braised products, roasted meats, soy-braised meat, loading at 85~95℃, target 10~25℃
Bakery products Bread, cake, mooncakes, loading at 80~90℃, target 20~25℃
Meat processing Ham, sausage, meatballs, loading at 75~85℃, target 10~15℃
Central kitchen Prepared dishes, catering, loading at 80~90℃, target 10~20℃
Fast-food chains Rice, side dishes, loading at 80~90℃, target 15~25℃

In cooked-food and soy-braised workshops, products go into the cabinet on the trolley right after coming out of the pot, replacing natural spread cooling; bakery and pastry items can be packaged once past the cooling stage, with the target temperature set at 20~25℃.

The same series also includes DKN-RHC-60D-80, with the same exterior and single-cabinet inner dimensions, the difference being the refrigeration configuration and cabinet temperature; see food blast chillers. For batches of several hundred kilograms or more, or continuous production with packaging, see liquid nitrogen freezers; where materials need direct contact with the cooling medium for heat exchange, see immersion chillers.

Installation Conditions

  • Site: reserve trolley passage and cabinet door opening space according to overall dimensions, and leave heat-dissipation distance around the condenser.
  • Power: 220V / 380V optional, configure a 2.5 square power cable according to the machine’s total power and provide proper grounding.
  • Medium: air-cooled models require no external cooling water; when changed to water cooling, cooling water and a cooling tower need to be provided on site, confirmed per order.
  • Exhaust and environment: the condenser discharges heat to the environment, so keep the installation location ventilated; the cabinet belongs to a cooked clean area, cleaned per shift, and not shared with the raw-material area.

Warranty and After-Sales

One-year warranty for the whole machine; a solution is provided within 2 hours of receiving a request, arrival on site within 24 hours, and fault clearance within 72 hours; one free on-site service per year, with lifetime technical support.

Frequently Asked Questions

How much material can DKN-RHC-60D-45 hold per batch, and how long does cooling take?

30 standard trays per cabinet, 3~5 kg per tray, about 100 kg per batch per cabinet and about 200 kg for both cabinets. Single-batch cooling takes 1~2 hours, depending on food type and loading temperature; run a test with your own material before production.

Cooked food enters the cabinet at 60~90℃; what discharge temperature is suitable?

The discharge temperature is adjustable within the range of 3~10℃. Braised products, roasted meats and soy-braised meat commonly use 10~25℃, while bread and mooncakes can be set at 20~25℃; after cooling, transfer to the 0~4℃ refrigeration stage as soon as possible.

Does this equipment need liquid nitrogen?

No. Cooling capacity is produced by the compressor and evaporator, with heat dissipated by the air-cooled condenser; there is no vacuum system in the machine, and no liquid nitrogen storage tank is connected. For liquid nitrogen deep-low-temperature applications, see liquid nitrogen freezers.

What power distribution capacity is needed?

Total power is about 4.55 kW, power supply 220V / 380V optional, power cable 2.5 square; power distribution capacity and grounding are determined according to installation requirements.

What are the practical differences of the dual-cabinet model compared with the single-cabinet model?

The two cabinets open independently, so they can be used in staggered mode: one cabinet cooling while the other is loaded, and the single-batch loading amount adds up according to the number of cabinets.

To check the cabinet model against your product and batch weight, go to contact us and describe your single-batch loading amount, individual piece thickness, loading temperature and target temperature.
