What is the difference between LN2 quick freezing and compressor freezing?

The temperature of liquid nitrogen is -196℃. When it contacts food it vaporizes and exchanges heat directly with the food; compressor refrigeration removes heat indirectly through cold air or contact surfaces. LN2 quick freezing lets food pass more quickly through the 0℃~-5℃ maximum ice crystal growth zone, forming finer ice crystals and reducing drip loss and damage to cell structure.

After vaporization, liquid nitrogen becomes inert nitrogen gas, which does not oxidize the food or affect its color. The two methods can also be used in combination, matched to product and capacity requirements.

Are an LN2 blast freezer and a blast chiller the same thing?

No. The two use different cooling methods:

Item LN2 Blast Freezer Blast Chiller
Cold source Liquid nitrogen (-196℃) Compressor refrigeration, evaporation temperature -40℃
Cooling method Direct heat exchange via LN2 vaporization Forced cold-air circulation
Discharge temperature Can reach below -18℃ (quick freezing) Typically 3~10℃ (chilling)
Typical use Products that need to be frozen Rapid cooling of cooked food and bakery products after coming out of the oven

The blast chiller does not include a vacuum system; choose between the two based on your process goal.

What information is needed for selection?

Material type and form, single-piece specifications, throughput (kg/batch or kg/h), infeed temperature, target temperature, freezing process temperature, site conditions, power supply specifications, LN2 supply conditions, and delivery location. The more complete the information, the more accurate the configuration and quote.

See the list on the Contact page for details.

What needs to be prepared for equipment installation?

  • The wiring between the power supply main line and the electrical control cabinet is to be installed by the buyer
  • The exhaust duct, liquid nitrogen and liquid nitrogen tank are to be provided by the buyer
  • The equipment is delivered to the site by the supplier, which dispatches personnel for installation and commissioning
  • Acceptance is carried out by the buyer’s personnel for appearance, configuration and safety, followed by function and operation acceptance after installation and commissioning

The LN2 tunnel freezer is a continuous production line, so operating and conveying interface space must be reserved at the infeed and outfeed ends.

How do the warranty and after-sales service work?

  • 1-year warranty on the complete machine, 2-year warranty on the control system
  • Free annual on-site after-sales follow-up visits
  • After receiving a fault report, we communicate by phone first and provide a solution within 2 hours; if the issue cannot be resolved by phone, we arrive at the site within 24 hours and clear the problem within 72 hours
  • During the warranty period, faults caused by the supplier’s design or manufacturing are repaired free of charge
  • Long-term technical support and spare parts supply after the warranty period

Can the equipment be customized to our product?

Yes. The equipment can be configured in combination according to the customer’s product form, capacity and process requirements, covering cabinet, chamber and tunnel models, and customized products can be designed and manufactured according to user requirements.
